Can I change my delivery date?
Of course! As long as you call us at least three days before
your original delivery date. If your Fresh Ketch has already
been shipped, you will have to make arrangements for someone
to receive the delivery and shuttle your seafood into the freezer
for you.
How long will my Fresh Ketch remain frozen before it
has to be put in the freezer?
It's hard to say as this depends on where you're located. All
of our products are shipped frozen and packed with dry ice, which
does a great job of keeping things glacially cold for around
two days, which is the time it takes for your Fresh Ketch to
travel from Alaska to your door.
Can I re-freeze my Fresh Ketch?
We know that dinner plans sometimes change. If you thawed your
Fresh Ketch and then decided not to cook it, it can be stored
in the coldest part of your refrigerator for up to two days.
While we really don’t recommend it, your fish can be
re-frozen – but take care to do this only once: Quality
is compromised each time a fillet is frozen/thawed. We work
hard to send you the best Alaska has to offer and we'd hate
for you to experience anything less!
Does freezing alter the flavor or texture of the fish?
Seafood that's been properly frozen and stored is virtually indistinguishable
from fresh seafood -- unless, of course, you have an incredibly
distinguishing palate (and even then it's hard to tell!) When
seafood isn't properly packaged, the fats tend to oxidize and
become rancid. Not good. Also, when seafood isn't kept in a
stable sub-zero environment -- like, for example, a "self-defrosting" freezer
that goes through regular thawing cycles -- the process of
freezing and thawing will adversely affect the taste and texture
of the fish. Fresh Ketch fish is blast frozen, vacuum-sealed
in freezer burn-proof packaging, and stored at -20° F or colder.
How long will my Fresh Ketch last in the freezer?
How long Fresh Ketch seafood will maintain its premium quality
depends on your home freezer. For freezers that hold a consistent
temperature of 0° F or below, the recommended maximum
storage time is four months. However, if your freezer is of
the frost-free variety that cycles through thawing temperatures,
we recommend that you limit storage time to four weeks.
Can I buy Fresh Ketch fish "a la carte"?
Once you've received a Salmon Troller or Halibut Schooner, you've
got all the tools and instruction you need to recreate another
great dinner party experience -- everything, that is, except

What are the benefits of wild salmon over farmed salmon?
The salmon in Alaska live their lives in a natural environment
that is perfectly suited to yielding incredible tasting fish.
Wild Alaskan salmon eat only the food that is indigenous to
their ecosystem, which is the source of their natural pink
color and authentically Alaskan taste. Farmed salmon are fed
fishmeal pellets, a nutrient-poor conglomerate that leaves
the fish looking tired and gray. Because nobody wants to eat
gray salmon, farmed fish are fed a petroleum-based
salmon-colored pigment to make them look healthier… and
more like wild salmon.
Wild salmon swim in the open sea, an activity that allows them
to build muscle, trim fat and keep their flesh firm. Farmed salmon,
on the other hand, spend all their days in crowded pens, essentially
banging into each other like bumper cars. The result is a paunchy
fish with mushy flesh. These close living quarters are also very
bad for their heath, making them susceptible to parasites and
diseases. To keep the stocks “healthy,” fish farmers
bring in the reinforcements: pesticides, antibiotics, and disinfectants.
Needless to say, all of this wreaks havoc on the farmed fish’s
flavor profile.
Long story short, as we like to say in Alaska: Friends don’t
let friends eat farmed salmon!
How do I know my seafood is done?
There are several ways to know if your fish is done to perfection:
1) Make a small cut into the meatiest part of the fish. If
the flesh has turned from translucent to opaque, it's done!
2) If the juices on top of the fillet have become opaque and
solid, it's done! 3) If the fish is flakey and slightly firm
to the touch, it's done! 4) If a meat thermometer inserted
into the thickest part of the fish reads 140º F, it's … a
little overdone (in our opinion).
In Alaska, we prefer to eat our fish rare to medium-rare (about
120º F), when the center is still translucent. Fresh Ketch's
Wild Alaskan Salmon is sushi grade, and has been flash frozen
at minus 20º F, so it can be slightly undercooked. (It’s
also best to slightly undercook halibut, as the fish will continue
to cook after you remove it from the oven.)
Is Fresh Ketch's Wild Alaskan Salmon sushi safe?
Yes! And here's why: Our flash frozen salmon has been deep frozen
to at least -10º F. During shipping, it will spend two days
with dry ice, which ranges between -78º F and -109º F. These extremely
cold temperatures are sufficient to ensure that our salmon
meets nationally accepted safety guidelines for rendering raw
fish "sushi-safe."
How long will
smoked salmon keep?
Fresh Ketch's frozen smoked salmon may be kept in a home freezer
for several months. Once it's thawed, however, smoked salmon
should spend no more than one or two days in the refrigerator.
What do I do with the dry ice?
Always handle dry ice with care and wear heavy protective gloves
whenever you're handling it. (If you don't have gloves, an
oven mitt or heavy towel will suffice.) If touched briefly,
dry ice harmless, but prolonged contact with the skin will
freeze cells and cause injury similar to a burn. For this reason,
keep dry ice away from children unless they are closely supervised.
If you suffer a dry ice burn, treat it as you would a regular
heat burn. Apply antibiotic ointment to prevent infection and
bandage only if the burned skin area needs to be protected. See
a doctor if the skin blisters or comes off.
Do not leave dry ice on a tiled or solid surface countertop
as the extreme cold could crack it.
To dispose of the dry ice, unwrap it and leave it at room temperature
in a well-ventilated area. It will eventually transform itself
from a solid to a gas.
What is your return policy?
We certainly don’t envision this happening – in fact,
